Stuart Adamson and Bruce Watson, the two guys in Big Country, got their bagpipe-like tone with similar setups.

    Adamson:

    MXR M-129 Pitch Transposer
    Korg SDD-2000 Digital Delay
    MXR Stereo Flanger
Fender Showman amp set to distortion

    Watson:

    MXR M-129 Pitch Transposer
    Korg SDD-2000 Digital Delay
    Boss DD-2 Digital Delay
    Boss OC-2 Octaver
    Boss CE-5 Chorus Ensemble
    Boss TR-2 Tremolo

The MXR M-129 had four main transposed tones: chorus, octave up, octave down and octave and a fifth up, along with rate and depth knobs.

The esteemed Bill Ruppert used two different setups for his Uillean Pipes Effectology video.

The drones were guitar -> Hog on Freeze mode -> Stereo Electric Mistress -> Cathedral.
Melody was guitar -> Big Muff PI -> HOG -> SMMH -> Cathedral.

So, if I were doing this from scratch, I’d look at combinations of transposition + flanging/chorus/distortion (or a combination) + reverb. I’d look at ways to killing the attack (easy using the HOG), and I might even use compression for more sustain.

I’m a big fan of my eBow, incidentally, It makes killing the attack irrelevant, and allows one to sustain endlessly. I was just speculating about doing this using only pedals. As it is, if I want to get rid of the attack, I normally just use a volume/swell pedal, coupled with some sort of ducking reverb….

The Cathedral doesn’t have a setting where it pitch-shifts the original sound an octave up before reverb or delay, like the Verbzilla Octo mode. If you have a pedal capable of doing a octave-up shift, whether a HOG, any of the POGs, or even something from another manufacturer, you can put it in before reverb or delay to get that shimmer sound. Since you’re considering buying both pedals, you might consider buying a different type of pedal and therefore expanding the range of your pedals.

I own both the Cathedral and the Verbzilla, and am in the process of seeing if I want to get rid of the VZ and just use the Cathedral in combination with other pedals for this.

Here’s a thread containing discussion of getting that shimmer sound.

And, not to be heretical in my first post on the EHX forums, but the Effectology demos are great places to mine for ideas and set-ups, even if one uses non-EHX gear. EHX does make a lot of gear that is unique, though; I’m very happy exploring all that my HOG (with foot controller and expression pedal) is capable of….
